I got this delcious paprika (bell pepper) served at a friends one evening instead of the meat they were having. I wasn´t too excited as peppers/paprika´s have never been my thing. But oh man, was I ever wrong! Not only was it pleasing for the eye, it was totally delicious and filling too.

I made my version of it for lunch today, it´s super easy, healthy and takes about 20 min to prepare (10 min. if you already have cooked rice & beans in your fridge) and another 10 in the oven.

1 large red pepper
1 small tomatoe
1/2 cup coocked brown rice
1/4 cup coocked beans ( I prefer black beans)
4-5 black olives
1 tablespoon Olive oil
1 tablespoon feta cheese
1/2 slice cheese ( I choose vegan)
Salt and pepper.

Cut the pepper open and clean the insides. Put stuffing (above recipe) inside, starting with beans and rice and everything else on top, cheese last. Slice tomatoes. Put on a dish in a oven, tomatoes to the side (not inside of pepper). I like to sprinkle some parmesan on top when serving. Ready when cheese is melted, about 10 minutes later. Oven about 180-200 C / 350-400 F.

Fyllt paprika bökuð í ofni.

1 stór rauð paprika
1 lítill tómatur (mega vera fleiri)
1/2 bolli soðin brún hrísgrjón
1/4 bolli eldaðar svartar baunir
4-5 ólífur
1 matskeið ólífu olía
1 matskeið feta ostur
1/2 sneak ostur (ég kýs vegan)
Salt og pipar eftir smekk

Skerið paprikuna og opnið og hreinsið að innan. Allt hráefni sett inní paprikuna, ostur settur síðast. Setjið paprikuna á ofnskúffu. Tómatasneiðar settar á ofnskúffuna. Bakið við 180-200 gráður í 10 mínútur eða þar til osturinn er bráðnaður. Ef bakaðar eru fleiri paprikur margfaldast uppskriftin með sömu hlutföllum.
