My daughter Isabella is pretty amazing at making things in the kitchen and has a special talent for baking. Much better than her mum, actually! One of the deserts she really likes, even though kids tend to go for sweeter deserts, is this super healthy chocolate mousse. When I taught her to make it, she was not very excited when she found out that avocado was one of the main ingredients... but once she made it herself and tasted it, her view of it quickly changed. Now she loves this avocado mousse and just recently joined me on a healthy TV cooking show where she whipped it up in a few minutes!  


Bella's Avocado Chocolate Mousse:
2 ripe avocados (use smaller, creamy avocadoes like "Hass")
Almond milk (amount depends on the size of the avocadoes - start with 3/4 cup and add to thin as desired)
1 tablespoon of honey (or substitute agave syrup)
1 1/2 - 2 teaspoon organic cocoa
3 organic dates

Handful of fresh field berries


Cut the avocadoes in half, remove stones, and scoop out flesh with a spoon. Place in a blender (I use a Vitamix or Nutribullet) with the almond milk.  Add dates (pits removed, of course), honey and cocoa and blend until smooth.
Put all in a bowl to set in the fridge for about an hour. Serve in a nice glass bowl, with wild strawberries or other fresh field berries on top.

Avokadósúkkulaðimús Bellu

2 avókadó (þroskaðir)
Möndlumjólk (magn fer eftir stærð lárperanna-byrjið með 3/4 bolla og bætið við eftir þörfum)
1 tsk. hunang (má líka vera agave sýróp eða stevia)
1 1/2 -2 teskeiðar lífrænt kakó 
3 döðlur (lífrænar)
Handfyllir ferskir ávextir (sett ofaná í lokin)

Skerið lárperu (avókadó) í helming og skafið innan úr og setjið í blandara (ég nota Vitamix eða Nutribullet), ásamt möndlumjólkinni. Bætið við döðlum (steinalausum),hunang og kakó sett útí og blandað saman. Setjið í skál og kælið í um klukkustund. Berið svo fram í fallegri glerskál, með ferskum jarðarberjum - og nú svo má líka bæta við þeyttum rjóma eða ís fyrir þá sem vilja.
